how to make scrambled eggs

- cold butter

      steps
      
        - 
          pre-heat your frying pan so you can get
          the leidenfrost effect
          when you drop water on it.
        
- whisk your eggs together in a small bowl.
- 
          add your cold butter to the pan, and move it around a lot so it
          doesn't burn while it melts.
        
- as soon as your butter has melted, pour in your whisked eggs.
- roll the eggs around in the pan so that they form curd ribbons.
- turn the heat all the way down.
- season with salt.
- 
          now, with a rubber spatula, gently push the eggs from the outside of
          the pan in.
        
- 
          by now, the eggs should mostly resemble scrambled eggs. turn the heat
          off entirely and continue cooking in the pan.
        
- season with freshly cracked black pepper.
