  1. pre-heat your frying pan so you can get the leidenfrost effect when you drop water on it.
  2. whisk your eggs together in a small bowl.
  3. add your cold butter to the pan, and move it around a lot so it doesn't burn while it melts.
  4. as soon as your butter has melted, pour in your whisked eggs.
  5. roll the eggs around in the pan so that they form curd ribbons.
  6. turn the heat all the way down.
  7. season with salt.
  8. now, with a rubber spatula, gently push the eggs from the outside of the pan in.
  9. by now, the eggs should mostly resemble scrambled eggs. turn the heat off entirely and continue cooking in the pan.
  10. season with freshly cracked black pepper.
